I'm not sure that there's a more iconic children's literary character than Dr. Seuss' The Cat in the Hat. He's definitely on the Mt. Rushmore of children's book legends. It has been awhile since I made a Dr. Seuss school lunch recipe for my kids, but since it's his birthday this week, along with Read Across America Day, it was definitely time. These fun book recipes always bring a smile to my kids' faces so I'm not ashamed to admit that I took a bit longer to make these lunches this week.
My three kids have developed different tastebuds when it comes to certain foods so the background of the pinwheel sandwiches in each of my kids' lunches are all different. Feel free to fill the sandwich with whatever ingredients your child prefers. The three varieties I made were nut-free spread and strawberry jam, grilled cheese and turkey (pictured above), and pesto, turkey, cheese, and fresh spinach.
