How to Make a Celery Recipe Board for National Celery Month!

March is National Celery Month and my family is celebrating by using Dandy Celery Sticks in five delicious celery recipes that will keep you wanting to make them all year round. You don't have to create all of these at once to fit on your food board, but I highly recommend that you do try all of them to discover a new favorite way to enjoy celery.

Celery is packed with flavor and low in calories so it is perfect for snacking on and cooking with. Celery and Fig Baguettes

Ingredients: Dandy Celery Sticks, figs, almond butter, baguettes.

Directions:

Toast baguette slices in oven on a baking sheet. Spread baguette slices with almond butter. Top with sliced celery and figs. 

Buffalo Chicken Celery Sticks

Ingredients: Dandy Celery Sticks, 1/2 cup buffalo sauce, 2 tbsp. mayonnaise, salt and black pepper to taste, sliced green onion, blue cheese crumbles and dressing, 2 cups shredded chicken.

Directions:

1. Mix together buffalo sauce, mayonnaise, salt and pepper. Drop in chicken and coat with sauce. Chill in refrigerator. 

2. Stuff celery sticks with buffalo chicken mixture. Top with green onion and blue cheese crumbles. Drizzle with blue cheese dressing.

Shrimp and Celery Rolls

Ingredients: 1/3 cup chopped Dandy Celery, 1 pound chopped shrimp, 2 chopped green onions, 3 tbsp. mayonaisse, 1 tbsp. chopped fresh dill, 1 tbsp. lemon juice, salt and pepper to taste, rolls.

Directions:

1. Mix mayonaisse, dill, lemon juice, salt, and pepper. 

2. In a separate bowl combine shrimp, onions, and celery. Combine with mixture from step one. Place in refrigerator to chill.

3. Split rolls and fill with desired amount of shrimp and celery mixture. If using with board or as appetizers, cut in half. Serve with lemon wedges if desired.

Celery Guacamole

Ingredients: 3 sticks Diced Dandy Celery, 2 tbsp. chopped red onions, one container of your favorite guacamole, 1/2 cup chopped cilantro, tortilla chips.

Directions:

Mix together ingredients and top with any remaining celery, onions, and cilantro. Serve with tortilla chips for dipping.

Kombu Celery

Ingredients: Dandy Celery Sticks, furikake seasoning (or 3 small snack-sized sheets of nori, pinch of sugar, toasted sesame seeds), 1 1/2 tbsp. sesame oil, 1 tbsp. soy sauce, toasted sesame seeds.

Directions:

Combine furikake (or substitute), sesame oil, and soy sauce in a mixing bowl. Toss celery in the mixture. Chill uncovered for 30 minutes. Sprinkle with sesame seeds and serve.
