This Popover Pancakes recipe is not only one of my kids favorite meals, it's also easy to make on your BBQ when you don't want to heat up the house on those hot summer days! This is an old family recipe that I first experienced shortly after my wife and I got married. My mother-in-law gifted us a binder full of recipes that my wife grew up with, but we recently improved it when we found Nellie's Free Range eggs! The other reason why this is such a fun recipe is because you can make it with your kids. Since my children have grown up with these pancakes, they now cook them alongside us! Makes Two Large Popover Pancakes (4 Servings)
Ingredients: 4 Nellie's Free Range eggs, 1 stick butter (1/2 cup), 1 cup milk, 1 cup flour, dash of nutmeg, two handfuls of berries, sprinkling of powder sugar, 2 aluminum pie tins.
Directions:
1. Preheat grill to 425°. Melt butter and pour half in one pie tin and half in the other.
2. Stir milk, flour, eggs, and nutmeg in bowl, leaving batter slightly lumpy.
3. Pour half of the batter in one tin, and half in the other. Place on barbecue.
4. Grill pancakes for 12-14 minutes or until golden brown and fluffy.
5. Top with berries and powdered sugar and serve immediately.
