Dr. Seuss is definitely one of our family's favorite authors, big surprise right? This is one of the reasons why we love National Read Across America Day, which happens to be Dr. Seuss' birthday. It's this week so we thought we would celebrate by making my kids a school lunch that includes a nod to a few of their favorite Seuss books! I made this lunch in an Easy Lunch Boxes container and included ideas from The Cat in the Hat, One Fish Two Red Fish Blue Fish, and Green Eggs and Ham. Have fun on Dr. Seuss' birthday and be sure to read some of your favorite books with your children!
Ingredients: Red apple, white cheese, vegetable pasta, fish shaped crackers, bread slices, egg salad, diced ham, green food coloring.
Directions:
1. Slice apple and cheese and stack together, alternating the ingredients as shown to make The Cat in the Hat's hat. Place in main compartment and surround with cooked corkscrew pasta. I used a veggie variety because I thought the shape and colors were very Seuss like.
2. Make your favorite egg salad recipe but dye it green with food coloring. Place between two small slices of bread and top with ham. Put in side compartment.
3. Pour fish crackers into second side compartment.
